Cozy Chicken & Sweet Potato Bowl

Ingredients:

  • 1 chicken breast

  • 1 medium sweet potato, cubed

  • 1 cup broccoli florets (or green beans)

  • 1 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp smoked paprika (or cinnamon for extra cozy)

  • Salt and pepper, to taste

  • Optional: 1–2 tbsp Greek yogurt or tahini for topping

    Instructions:

    1. Preheat oven to 400°F. Toss sweet potato cubes and broccoli with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet and roast for 20–25 minutes, flipping once, until tender. While veggies roast, season the chicken with salt and pepper. Cook in a skillet over medium heat for 5–7 minutes per side, until cooked through. Let rest, then slice.

    2. Assemble bowls with roasted veggies and sliced chicken.

    3. Finish with a dollop of Greek yogurt or a drizzle of tahini if desired.
